Baked Stuffed Chicken Breast(Orange/Cranberry Stuffing)
8 Thin Sliced Boneless Chicken Breasts
1/2 Teaspoon Ginger
1 Teaspoon sugar
1/2 cup finely ground fresh cranberries
4 slices dried/crumbled whole wheat bread
Lightly braise chicken breasts. Set Aside
Mix bread crumbs, cranberries, ginger, sugar and juice from orange. With a fork shred orange meat and add to mixture. Mixture should be moist...add water if needed to get moist mixture.
In baking dish lay out 4 breasts, stuff with equal portions of stuffing mixture. Cap with top layer of chicken breast.
Bake at 350 degrees approximately 25 minutes till done. Ovens vary so check often. Do not over cook.
*I like to serve this dish with a light pasta salad and some dinner rolls or biscuits.
